Todd and Erin are not only co-founders and co-owners of the winery; they touch every single aspect of the business. They connect with growers. They interact with distributors. They respond to customers. They deliver wines. They tackle paperwork. Just about the only thing the couple doesn’t do is make the wine—they leave that to Ernest’s winemaker, Joseph Ryan. Ryan is spearheading this new edition of the Edaphos wine program. He believes wines are made in the vineyard, and thus imperative to partner with growers who align with our philosophies of sustainability and stewardship. In the cellar, the juice is guided along without the use of sulfur or new oak. They ferment with native yeast and a long, slow natural malolactic. A combination of concrete, stainless steel, and neutral barrels and puncheons allow the wines to highlight their provenance and natural varietal characteristics.

“Edaphos (pronounced ee-dah-fos) means “base,” “ground,” and “soil” in Greek; we felt it was a good expression of our attitude behind this winemaking. We consider this part of our business to be our “laboratory,” the place where we make small-lot wines that incorporate new and exciting approaches to winemaking with different styles and off-beat grape varietals. Sometimes we also call it our “sandbox.” The Edaphos strategy enables us to explore, experiment, and apply some of the lessons we learn to wines we make under our other labels. It also allows us to produce different wines whenever we feel like making them.”

This Petit Arvine is from the Alder Springs Vineyard in Mendocino County about 10 miles from the Pacific Ocean. It is an incredible, cool climate vineyard site that is farmed organically and biodynamically to produces high quality fruit and complex white wines.
