Stephan Attman describes his winemaking as “not doing the wrong thing at the wrong time.” The estate’s premium wines are treated with a minimalist approach and with the highest respect in the cellar. Gentle clarification, natural and spontaneous fermentation and the abandonment of fining agents create wines with a distinctive indigenous and very elegant style. Pumping the juice or wine is never necessary in the gravity flow winery, allowing for minimal, and gentle vinification.

The fact that this estate is crafting some of the very best dry wines in Germany is no fluke, rather a result of nearly obsessive winemaker Stephan Attman’s commitment to both dedicated cultivation of Deidesheim and Forst’s best sites and meticulous work in the cellar. The Phalz is one of Germany’s warmest and driest wine growing regions due to the rain shadow effect from the Haardt mountains (an extention of the Vosges mountains found in Alsace). Von Winning maintains some of the oldest parcels in Grosses Gewächs vineyards smattered across Forst, Deidesheim, and Ruppertsberg. Attman’s every decision is informed by great enthusiasm and experiences at estates in the Cote d’Or and abroad. For example, Attman’s newer vines are planted at a very high vine density- 9500 vines per hectare, as opposed to the typically under 5000. This creates competition amongst the vines, forcing the roots to grow deep, naturally reducing yields. Attman has adopted the single cane trellising system, prevalent in Burgundy, and Grosses Gewächs wines ferment in 500mL French barrels. SAUVIGNON BLANC
Sauvignon Blanc, a very recognizable white wine that is popularly dry, refreshingly zesty, and has strong, fruity and herbal characteristics. Ever hear of the term “pyrazines?” It’s a term noting the strong herbaceous flavors that are derived from compounds called Methoxypyrazines. These compounds are also found in bell peppers! A flagship varietal to the Loire Valley in France (Sancerre) and New Zealand, the Sauvignon Blancs from New Zealand tend to be more aromatic and have tropical fruit notes than those from the Bordeaux or Loire Valley regions in France. Usually fermented in stainless steel vats, Sauvignon Blanc gives a clean, crisp flavor with occasional mineral notes, but no characteristics from oak, like you would normally see in a grape varietal like Chardonnay. However, look out for Fumé Blanc, this style of wine is an oaked-version of Sauvignon Blanc.

GERMANY
Germany, home of the Riesling grape. With plantings dating back to the 1700’s, Germany has become the world’s top producer of highly concentrated, premier Riesling. This white wine here can range from bone dry to lusciously sweet. Outside of Riesling, Germany is also ideal for cool climate light red wines including Spätburgunder (Pinot Noir), Dornfelder, and Blaufränkisch. Germany has a total of 13 wine regions with the majority of wines coming from the southwestern portion of the country. Some of the most important wine growing regions being the Mosel, Nahe, Rheingau, Rheinhessen, Pfalz, Baden, and Franken. In nearly all regions, the best vineyard sites can be found on steep and stony slopes maximizing optimal conditions for grape growing.
