Bodega Los Aljibes is located on the south-eastern edge of the Iberian Peninsula. They cultivate 50 hectares of olives that are picked at optimal ripeness to create an olive oil that is the perfect balance of tart, sweet, bitter and herbal.

BODEGAS LOS ALJIBES

Bodega Los Aljibes is located in Finca los Aljibes, in the municipality of Chinchilla de Montearagón, Albacete, an area with the denomination Vino de la Tierra de Castilla.

At Finca Los Aljibes they make wine and cultivate 50 hectares of olives, which are picked off the tree (never the ground) at their optimum maturity.

The olives are then immediately taken to the press, and extraction begins a few hours after picking. Once at the press leaves and branches are removed, and the best olives are chosen. Cold extraction of the oil proceeds as soon as possible.

Temperature is rigorously controlled throughout the entire process, conserving all the attributes of the olives.
