Arugula, Radicchio, and Mint Salad

If there’s a radicchio salad with shaved parmesan on the menu, I almost always order it! I love having a salad like this on the table alongside Chicken Milanese or a light, white fish. It’s almost like a palate cleanser. This salad would be great for lunch too with a piece of salmon on top. The bitterness of the radicchio marries well with the peppery arugula and the honey in the dressing ties everything together.
Ingredients
- 5 oz. Arugula
- 1 head of radicchio
- 1/4 cup mint leave
- ½ cup shaved parmesan
- ½ cup pistachios
- Cracked Black Pepper
- Optional: It’s fun to throw in whatever stone fruit is in season like apricots or peaches
- 1 tbsp. Dijon Mustard
- ¼ cup Lemon Juice
- 1 tbsp. Honey
- ¼ cup Olive Oil
