Marinated Feta

This is an easy, no-brainer, make ahead trick to keep in your back pocket for that next dinner party or backyard BBQ - Marinade your feta. You can marinade the feta with whatever herbs and spices you want but olive oil and lemon juice tend to be the best base for the marinade. [gallery size="large" columns="2" ids="43306,43307"] Here is your grocery list for a smaller portion, if your party is bigger I would double the amount below if not triple:
    • 1 block creamy feta (French or Bulgarian)
    • Olive oil (enough to cover the feta
    • 1 tsp. peppercorns
    • Juice and zest of 1 lemon, save a slice or two to throw into the bowl
    • 1 tbsp. cumin
    • 1 tbsp. coriander
    • 1 chopped red jalapeño
    • Handful fresh mint leaves
    • 1 minced shallot
    • 1 minced garlic clove
Combine everything aside from the feta into a mixed bowl and combine. Place the feta into a bowl that can be sealed airtight and pour the olive oil mixture over the feta and let sit for an hour or so. Can sit overnight and will continue to get better. When ready to serve, let come to room to temperature and enjoy alongside crusty bread or crackers! Enjoy with a glass of 2018 Rocca del Principe Fiano di Avellino ‘Tognano’
