Potatoes 2 Ways: (2) Miso-Ginger Horseradish Purple Sweet Potatoes

From the Club Argaux Fall Test Kitchen: Miso-Ginger Horseradish Purple Sweet Potatoes Ingredients: (Serves 6)

  • Purple Sweet Potatoes Cilantro Ginger Horseradish White Miso White Sesame Seeds Toasted Sesame Seed Oil Butter Green Onion Rice Vinegar

Step 1 Steam the sweet potatoes for about 40 minutes or until tender. This may vary based on the size of the potato. Step 2 While the potatoes are steaming, make the sauce by combining garlic and ginger in a food processor until smooth, then add the miso, sesame oil, vinegar, and horseradish. Step 3 Heat butter in a skillet. Stir frequently so butter doesn’t burn but starts to froth. It’s ok if butter browns a little, yum! Step 4 Once the potatoes are ready, cut them in half lengthwise. Place them face down in the pan with butter. Allow them to crisp, sizzle, and brown. Flip the potatoes and repeat. You can start to press down on the potatoes slightly once they have a nice char to give them that smashed look. Step 5 When they are ready, remove them from the pan and place on a serving platter. Serve them with the sauce either underneath each potato or drizzle on top. Garnish with sesame seeds, green onion, and cilantro. Enjoy!
