Summer BBQ Series: Watermelon Chaat
From the Summer, Club Argaux Test Kitchen: Watermelon Chaat Part of our Summer BBQ Series, our Watermelon Chaat makes the perfect elevated side dish to keep the summer vibes high and tasty!
Ingredients:
- Watermelon, chopped, seeded, and cubed
- ½ tsp. Sumac
- ½ tsp. Cayenne pepper
- 1 tsp. Cumin seed
- ½ tsp. Paprika
- ½ tsp. Coriander
- Juice of 1 mandarin
- Juice and zest of 1 lime
- ½ tsp. finely chopped serrano chile
- 5 or so mint leaves, thinly sliced into ribbons
Step 1: Place the chopped watermelon in a bowl or a serving dish in an even layer.
Step 2: Toast the cumin seed in a small pan until fragrant, about 3 minutes. Grind in a mortar and pestle or you could combine with all spices in a spice grinder/food processor. The key here is to not grind the cumin seed into a fine powder because the coarseness will add a nice texture to the final dish.
Step 3: Combine the cumin with everything else in a bowl and mix together. Be sure to set aside a bit of the lime zest and mint leaves for garnishing. Pour the mixture over the watermelon and gently mix. Garnish the watermelon with the remainder of the lime zest and mint leaves. Enjoy!
