The Best Chopped Salad

[gallery columns="2" size="large" ids="49357,49359"] Pair with 2021 La Miraja Grignolino d’Asti DOC from our Club Argaux 2022 Winter selection or from Club Argaux's 2023 Fall selection, the 2020 Cieck Erbaluce di Caluso DOCG Ingredients:
    • Radicchio (chopped)
    • Endive (chopped)
    • Green olives (sliced in half)
    • Slivered almonds (toasted)
    • White beans
    • Shallots (thinly sliced)
    • Chives (chopped)
    • Italian parsley (chopped)
    • Flakey sea salt & coarse fresh ground pepper
    • Red Pepper Flakes
    • Cheese: You want savory, salty and nutty. I’ve used ricotta salata, pecorino romano and parmigiano reggiano
For the dressing:
    • Extra virgin olive oil
    • Lemon juice
    • Dijon mustard
    • Aged balsamic/balsamic glaze or honey
Toast the almonds, set aside to cool. Combine radicchio, endive, olives, almonds, beans, shallots, chives and parsley to a large salad bowl. Sprinkle with flakey sea salt, lots of coarse ground pepper and red pepper flakes. Shave your cheese and add to the bowl or set aside to top plates when serving. Combine ingredients and mix dressing. Toss salad with the dressing and serve… drizzle with balsamic reduction if using and top with cheese if need be. So easy, and so good. The perfect mix of bitter, savory, salty and sweet!
