Perfect Pesto Pasta

From the Club Argaux Spring Test Kitchen: The Perfect Pesto Pasta Pair with the 2022 Quinta de Santiago ‘Vinha do Pisco’ Alvarinho/Loureiro or any of the featured white wines from the Club Argaux Spring Seasonal Selections. Ingredients:

  • ½ cup pistachios 1 garlic clove Juice and zest of 1 lemon ⅓ cup of Parmesan and pecorino 6 handfuls of basil leaves ½ cup olive oil Pepper Sea salt

Step 1 Combine garlic and olive oil in a food processor. Add in the basil and lemon juice. Blend until smooth. Add in the pistachios and cheese. Add more olive oil as needed! Taste and then season with salt and pepper. To note: Adjust the quantities on the above based on your preferences. The lemon zest is not necessary, but I do find in the Spring and Summer months it really adds a brightness to the pesto that I love. Step 2 Make your pasta! Pesto is a great sauce for pastas that have a corkscrew shape, and longer cuts. Whatever you choose, boil your pasta in water until about 2-3 minutes prior to it being done. Step 3 Transfer the pasta to a skillet with your pesto and mx everything together. Add pasta water and stir, coating the pasta with a pesto that gets creamier and creamier with the more water you add. Add your pasta water little by little. Step 4 Before serving, garnish with pecorino, parmesan, pepper and sea salt. You could also sprinkle your lemon zest over the top of the pasta! Cheers!
