Potatoes 2 Ways: (1) Margaux’s Moms Famous Mashed Potatoes

From the Club Argaux Fall Test Kitchen: Margaux’s Moms Famous Mashed Potatoes Ingredients: (Serves 6)
    One Head of Garlic (roasted) 6 Russet Potatoes 4 tablespoons of Butter 1 cup of Milk or Heavy Whipping Cream 2 large Dollops of Sour Cream Salt/Pepper Garlic Salt Chives (chopped) 1 cup Cheddar Cheese (grated) 1 more tbsp of butter cut into cubes to melt on top
Step 1 Preheat the oven to 400 degrees. Step 2 Slice the top off of the garlic head and place the head in a foil lined baking dish, drizzle with olive oil and sprinkle with salt and pepper. Cover with another piece of foil and roast for 1 hour. I usually roast them with the potatoes. Step 3 Wash potatoes and pierce them all over with a fork. Place potatoes on a baking sheet, drizzle with a little olive oil and bake for about an hour or until the potatoes are soft to the core. Step 4 Once the potatoes and garlic are done, combine in a large bowl for mashing. Add in butter, milk, and sour cream. Mash to desired smoothness. Now add in your seasoning. Salt, pepper and garlic salt to taste (you will need more salt than you think). Step 5 At this time I usually taste them and make sure they are seasoned correctly and my desired texture. If they are too stiff I will add in a little more milk or sour cream. Now add in your chives and cheese and mix together. Step 6 Add the potatoes to a buttered baking dish. Scatter the cubed butter on top of the mashed potatoes along with a little more cheese. Step 7 Place in the oven and cook for about 20 minutes or until heated through before serving. Pro tip: You can always prep these the day before and just reheat them before you serve! Enjoy! [gallery size="medium" ids="54973,54970,54971"]
