If you’re tasked with bringing a salad or a side, this is something to keep in your back pocket. You can dress the Zucchini with the Green Herb Sauce for extra goodness or simply toss with olive oil and lemon. Ingredients
    • 3 Zucchini
    • ½ cup of Pistachio
    • Shaved Parmesan
    • Zest of 1 Lemon
    • Cracked Black Pepper
    • Green Herb Sauce (see ingredients + recipe) to taste
Mandolin the zucchini or thinly slice if you don’t have a mandolin. Set the zucchini aside in a bowl. Make the Green Herb Sauce (see recipe). Zest 1 lemon and set aside. Mix the zucchini with the sauce, cracked black pepper, and ¼ cup of the pistachios. To plate, spoon onto a serving tray. Garnish with the rest of the pistachios, lemon zest, shaved parmesan, and cracked black pepper. Set right on the dinner table and enjoy family style alongside Mediterranean fare!
