Xavier Weisskopf cut his teeth as chef de cave at Château de Saint Cosme in Gigondas before falling for Chenin Blanc and planting his flag in Montlouis-sur-Loire in 2005. This bottling comes from a section of his Touche Mitaine vineyard (60+ year old vines on limestone and silex) that was recently declassified from the Montlouis appellation, which is why it wears a humble Vin de France label. Fermented with native yeasts and raised in stainless steel, it's dry, crisp and pure, with lemon, green apple, white flowers and a stony finish. Enjoy with fresh goat cheese, oysters, or a lemon herbed roast chicken.
Certified organic farming, old vines, and native yeast fermentation.
