  • 2018 Scar of the Sea Sauvignon Blanc Cofermented Cider (half-bottle)

    This cider comes from Newtown Pippin apples grown at Bear Valley Ranch. The cider is barrel fermented with native yeast and no additions. It is then aged for 12 months and then refermented with Sauvignon Blanc grapes from the Olivers Vineyard in the Edna Valley. Right before bottling, they added fresh Kafir lime leaves from some extra aromatics.

    Expect an insanely refreshing and crisp cider – we just had to have it! The lime leaves leave a little bitter kick at the end that keeps you coming back for more.

    This 80% Chardonnay / 20% Pinot Noir from Rilly la Montagne 1er Cru – Blanches Voies is almost overwhelmingly generous yet finesse-ful, salty, and spicy (think five-spice mix, specifically). This will grow incredibly complex with time in the cellar and in the glass. Pair with oysters, scallop tartare or foie gras and a fancy night!

    According to writer and critic Peter Liem, “Vilmart & Cie. is not only one of the greatest grower-estates in Champagne, but one of the finest champagne producers of any type in the region.” We couldn’t agree more!

This Champagne has a noble, Pinot Noir fragrance, leading to an utter masterpiece of weightless concentration. It has juiciness, minerality, lift, structure and length. It’s the perfect balance and could age another 15 years.
