This is the kind of Syrah people buy to cellar for 20+ years. 2022 was a beautifully ripe vintage, so it’s already tasting incredibly balanced and layered with flavor. Open or decant for 1-2 hours before enjoying with lamb, duck, braised beef, or anything with rosemary and thyme.

- Table Talk In the 13th century, a wounded knight returned from the Crusades seeking solitude. He built a small chapel at the top of a hill and lived there in isolation until his death. The hill became known as “l’Hermitage” - meaning “the hermit’s place.” That chapel still stands today: the Chapelle Saint-Christophe, overlooking the vineyards.

Domaine Laurent Fayolle is a small, family-run estate in the northern Rhône village of Gervans, now in its sixth generation under Laurent and his sister Céline. They farm roughly 10–13 hectares of hillside vineyards around Crozes-Hermitage and Hermitage, converted to organic viticulture, with old vines on granite, limestone, and loess soils that produce refined, terroir-driven wines. Since taking over the domaine in 2002, Laurent has focused on gentle winemaking — soft extraction, minimal new oak, and thoughtful parcel vinification to showcase the complexity and elegance of this historic region.
