These wines are the essence of “Chablis”, but not in a pop-and-pour with oysters kind of way. They are wines to savor and let unfold slowly in the glass or decanter. This premier cru comes from 50 year old vines in the lieu-dit of Butteaux and it is just perfection; Concentrated and opulent, yet racy and intensely saline. All of his 1er Crus are extremely limited.

Domaine Pattes Loup, led by Thomas Pico, is one of the most exciting names in modern Chablis. Since founding the estate in 2005, Pico has challenged regional norms with organic farming, drastically low yields, and minimal intervention winemaking. Based in the high-altitude villages of Courgis and Preys, his vineyards—many planted by his grandfather—sit on classic Kimmeridgian limestone and benefit from cool climates and biodiversity-focused viticulture. In the cellar, Pico ferments with native yeasts and ages his wines for extended periods (often 36–48 months) in concrete, stainless steel, and old oak, bottling without fining or filtration. The result is a lineup of deep, expressive Chablis with electric precision and undeniable character.
