Thomas Pico is the talk of the town. I found his wines last summer in France and suddenly I noticed them on all the best wines lists for the rest of the trip. The allocation is slim but worth it if you can get some before the Argaux team clears us out.

Organic farming practices, native yeast fermentation in concrete eggs and stainless steel tanks, aged on fine lees for 18–30 months, no oak is used to preserve the wine’s purity.

Domaine Pattes Loup, led by Thomas Pico, is one of the most exciting names in modern Chablis. Since founding the estate in 2005, Pico has challenged regional norms with organic farming, drastically low yields, and minimal intervention winemaking. Based in the high-altitude villages of Courgis and Preys, his vineyards—many planted by his grandfather—sit on classic Kimmeridgian limestone and benefit from cool climates and biodiversity-focused viticulture. In the cellar, Pico ferments with native yeasts and ages his wines for extended periods (often 36–48 months) in concrete, stainless steel, and old oak, bottling without fining or filtration. The result is a lineup of deep, expressive Chablis with electric precision and undeniable character.
