2022 Wonderland Project Atlas Peak Cabernet Sauvignon

Responsibly Farmed
Hidden Gem
Classic in Style

Grown high on a west-facing slope above the fog line on the northern ridge of Atlas Peak, this is a true mountain Cabernet. The palate is dense, layered, and impeccably structured, finishing long and refined. It carries the essence of red volcanic soil, wild California chaparral, and sun-drenched hillsides. All we can say is, there’s a reason the The French Laundry picked this gem up.

Founded in 2010, The Wonderland Project was created by wine broker and former sommelier Matt Ahern, along with the help of prestigious Sonoma grape growers. After years of selling wine to elite restaurants in the western United States, Ahern noticed a recurring missing item from most lists: high-quality wine made from impeccable fruit at an accessible cost.

Upon being unable to fill this niche himself, Ahern was inspired to fulfill the market lack himself. Today, The Wonderland Project produces Sonoma County Chardonnay and Pinot Noir from organically-farmed vineyards in Carneros. All wines are fermented with native yeasts and vinified with low-intervention methods in the cellar.

CABERNET SAUVIGNON

Known inherently as the best red grape variety in the world, Cabernet Sauvignon is the epitome of a perfect international traveller. Boasting strong black fruit flavors, it can give distinct characteristics varying by the region and soil it comes from. These bold, concentrated, and age-worthy wines can lay down roots and thrive all around the world. Cabernet Sauvignon is a natural cross between Cabernet Franc and Sauvignon Blanc originating from Bordeaux, France. The rich flavor and high tannin make a perfect pair to flavorsome red meats or simply elegant on their own.

NAPA VALLEY, CALIFORNIA

Napa Valley, where Cabernet Sauvignon is “King”. The valley itself in Northern California is not very big, but it is home to some of the most expensive and prestigious vineyards in California. Napa is separated from Sonoma and Central Coast by two sets of mountain ranges: the Mayacamus Mountains to the West and the Vaca Mountains to the East. Being in a valley, this region can heat up pretty quickly. However, there are cooling influences like fog and ocean breezes from San Pablo Bay that help to moderate the temperature within the valley. With more heat comes more concentrated, fuller-bodied wines, making this the perfect place for Cabernet Sauvignon. Other primary red grapes of focus are Zinfandel, Merlot, Syrah, and Cabernet Franc. The principal white varieties to look for here are Chardonnay and Sauvignon Blanc. You may also see Pinot Noir in the more southerly area of Los Carneros AVA where it can get cool enough to produce high-quality Pinot Noir. Featured AVA’s include Howell Mountain, Calistoga, St. Helena, Mount Vedeer, Los Carneros, Stags Leap District, Oakville and Rutherford.
