Organic and biodynamic farming practices, native yeast fermentation, no fining or filtering, vegan-friendly and only 500 cases produced.
This cider comes from Newtown Pippin apples grown at Bear Valley Ranch. The cider is barrel fermented with native yeast and no additions. It is then aged for 12 months and then refermented with Sauvignon Blanc grapes from the Olivers Vineyard in the Edna Valley. Right before bottling, they added fresh Kafir lime leaves from some extra aromatics.
Expect an insanely refreshing and crisp cider – we just had to have it! The lime leaves leave a little bitter kick at the end that keeps you coming back for more.
